Red cabbage coleslaw

INGREDIENTS

  • ¼ red cabbage, finely shredded
  • ½ red onion, finely shredded
  • 2 carrots, finely shredded.
  • 2 Tbsp dill, chopped
  • 2 Tbsp parsley leaves, chopped

Dressing

  • 1 cup sour cream
  • 2 Tbsp dijon mustard
  • 2 Tbsp lemon juice
  • pinch of chilli powder (to taste)
  • 3 Tbsp Olive oil

METHOD

  1. Combine shredded red cabbage, red onion and carrot in a serving bowl.
  2. Add dill and parsley, combine all ingredients well.
  3. Whisk dressing ingredients thoroughly until all ingredients are well incorporated and refrigerate for at least 10 minutes before serving.
  4. Add mixed dressing and gently toss the salad until well coated.
