Zesty Potato Salad

Prep: 15 minutes

Cooking: 30 minutes


  • 1kg baby potatoes
  • 1 roasted red capsicum
  • 1 handful of chopped parsley
  • Juice of 1 lemon
  • ¼ cup olive oil
  • 1 garlic clove, crushed
  • 1 teaspoon seeded mustard
  • Salt and pepper


  1. Boil baby potatoes until just tender.
  2. Drain and refresh in cold water.
  3. Slice in half and toss into your bowl. Add capsicum and parsley.
  4. Make dressing in a separate bowl and pour over while still warm so the potatoes soak it up.
