Chicken parmigiana with chips and salad

Win anyone over with this simple and tasty dinner staple.

INGREDIENTS

  • 600g crumbed chicken breast schnitzel
  • 1 x 400g can crushed tomatoes

  • 1 teaspoon dried oregano

  • 1 teaspoon dried basil

  • 1 teaspoon crushed garlic

  • Pinch salt

  • Pinch pepper

  • 250g shredded tasty cheese

SALAD

  • 1 lettuce

  • 4 tomatoes, sliced

  • 1 cucumber, sliced

  • ¼ cup olive oil

  • ½ teaspoon salt

FRIED CHIPS

  • 1kg potatoes (peeled and cut into chips)

  • Salt

METHOD

PARMIGIANAS

  1. Cook schnitzels as per instructions on packet.

  2. Mix all ingredients except cheese in a bowl.

  3. Once schnitzels are cooked, place them on an oven tray and cover them in the sauce mixture, then top each with a generous amount of tasty cheese.

  4. Place tray in a hot oven or under a grill until cheese has melted and turned golden brown.

SALAD

  1. Wash and separate lettuce from the cluster then cut.

  2. Add sliced tomatoes, cucumber, olive oil and salt to a large bowl and stir well.

CHIPS

  1. Wash and peel potatoes and cut into thick chips.

  2. Sprinkle with salt and fry until crunchy.

  3. Serve chips alongside the salad and parmigianas and enjoy.
