Rocket, basil & white bean salad

A perfect companion for your Crumbed Chicken Breast Schnitzel.

INGREDIENTS

  • 50g baby rocket
  • 1 cup basil leaves
  • 400g can cannellini beans, rinsed, drained
  • ½ small red onion, thinly sliced
  • 2 tablespoons extra virgin olive oil
  • ¼ cup raw sliced almonds
  • 50g feta, crumbled

METHOD

  1. Toss together rocket, basil, beans, onion and oil. Top with almonds and feta.
