Greek-Style Marinated Split Chicken

Enjoy the savoury taste of our Greek-style marinated split chicken, a flavourful family favorite.

INGREDIENTS

  • ½ cup olive oil
  • 2 Tbsp white wine vinegar
  • 1 lemon, juice and zest
  • 3 garlic cloves, minced
  • 3 tsps dried oregano
  • ½ tsp paprika
  • ½ tsp onion powder
  • ½ tsp white pepper, ground
  • ½ tsp salt

METHOD

  1. Whisk all ingredients except for the chicken in a jug.
  2. Place chicken in a large snap lock bag. Reserve ½ of the marinade and set aside and refrigerate.
  3. Pour the remaining marinade over the chicken. Remove as much air from the bag as possible.
  4. Gently massage marinade all over the chicken. Place in fridge for at least 30 minutes or preferable overnight.
  5. Preheat oven to 180° Remove chicken from the bag and place chicken, skin side down on to a lined baking tray and bake in the oven for 20 minutes.
  6. Turn the chicken over, skin side up and continue to cook for another 15-20 minutes or until chicken internal temperature is 75°
  7. When the chicken is cooked, remove from the oven. Serve with your favourite side dish.
