Tandoori Marinated Split Chicken

INGREDIENTS

  • ¼ cup natural yoghurt
  • ¼ cup veg oil
  • 1 lemon, zest and juice
  • 2-3 Tbsp Tandoori spice mix (or tandoori paste)

Spice mix (or you can use tandoori paste):

  • 3 tsp paprika
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • ½ tsp ground turmeric
  • ¼ tsp chilli powder
  • 1 tsp garam masala
  • 1 tsp dried mint

METHOD

  1. Whisk all ingredients in a small bowl. Place chicken in a large snap lock bag and pour over the marinade. Remove as much air from the bag as possible.
  2. Gently massage marinade all over the chicken. Place in fridge for at least 30 minutes or preferable overnight.
  3. When ready to cook, remove chicken from the fridge and bring to room temperature.
  4. Preheat oven to 180° Remove chicken from the bag and place chicken, skin side down on to a lined baking tray and bake in the oven for 20 minutes.
  5. Turn the chicken over, skin side up and continue to cook for another 15-20 minutes or until chicken internal temperature is 75°
  6. When the chicken is cooked, remove from the oven. Serve with your favourite side dish.
