Maple Roast Sweet Potato

- 600g sweet potato, peeled and chopped into rounds
- 2 tablespoons maple syrup
- 1 tablespoon butter, melted
- 1 teaspoon lemon juice
- Salt and pepper
- Melt butter in a large bowl, and mix syrup and lemon juice into it. Season sauce well.
- Toss sweet potato in the saucy mix and ensure all is well coated.
- Place sweet potato onto baking paper and pop into the oven for the last 30 minutes that the turkey is cooking.
