1. Place couscous in a heatproof bowl, add boiling water, cover with plastic wrap and set aside for 10 minutes. Using a fork, fluff up couscous.
  2. Heat oil in a frying pan on medium heat and cook onion and garlic for 5 minutes, until soft and golden. Add carrot, currants, almonds and seasoning mix.
  3. Cook, stirring, for 5 minutes, until carrot is tender. Add to couscous and stir to combine.
