Tempura Chicken Breast Nuggets

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, roughly chopped
  • 2 garlic cloves, chopped
  • ½ teaspoon wholegrain mustard
  • 400g can chopped tomatoes
  • 1 medium apple, peeled, chopped
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon raw sugar

Method

  1. Heat oil in a saucepan over medium. Cook onion for 5 minutes, until softened.
  2. Add garlic and mustard. Cook for 30 seconds, until fragrant.
  3. Add tomato, apple, vinegar and sugar. Simmer for 10 minutes, stirring occasionally, until apple softens and mixture thickens.
  4. Refrigerate until ready to serve.
