Crumbed Chicken Breast Fingers

Ingredients

  • 1 cup basil leaves
  • ½ cup coriander leaves
  • ½ cup mint leaves
  • ½ cup cashews
  • 3 garlic cloves, chopped
  • ½ cup extra virgin olive oil
  • 2 tablespoons lemon juice

Method

  1. Place all ingredients in a small blender or food processor. Process until a chunky paste is formed.
