Tempura Breast Chicken Pops

Ingredients

  • 4 long red chillies, seeded, roughly chopped
  • 4 garlic cloves, chopped
  • ¾ cup caster sugar
  • ½ cup fish sauce
  • ½ cup rice vinegar
  • ¼ cup lime juice

Method

  1. Place chillies and garlic in a small food processor. Process until finely chopped. Transfer to a small saucepan with remaining ingredients. Cook on low heat, stirring, until sugar dissolves. Increase heat and simmer for 5 minutes, until sauce has thickened slightly.
  2. Transfer to an airtight container and refrigerate until ready to use.
