Watermelon, Fetta and Mint Salad

  • 500g watermelon
  • 1 Lebanese cucumber, halved and sliced
  • 80g feta cheese
  • A large handful of mint leaves
  • ½ Spanish onion, sliced
  • A glug of olive oil
  • Juice of 1 lime


  1. Slice watermelon into bite-sized chunks and arrange on a plate.
  2. Toss onion, mint and cucumber and place on top of watermelon, and sprinkle with feta.
  3. Drizzle a glug of olive over and squeeze lime juice
