Watermelon, Fetta and Mint Salad

- 500g watermelon
- 1 Lebanese cucumber, halved and sliced
- 80g feta cheese
- A large handful of mint leaves
- ½ Spanish onion, sliced
- A glug of olive oil
- Juice of 1 lime
- Slice watermelon into bite-sized chunks and arrange on a plate.
- Toss onion, mint and cucumber and place on top of watermelon, and sprinkle with feta.
- Drizzle a glug of olive over and squeeze lime juice
