Turkey Fattoush Salad

A light meal with a stack of goodness

  • 500g Steggles Turkey Shortcuts Mince
  • Zest and juice of 1 large lemon
  • 1/3 cup olive oil
  • 3 crushed garlic cloves
  • 3 tsp sumac
  • 1 Lebanese flat bread
  • 2 Lebanese cucumbers, roughly chopped
  • 2 tomatoes, roughly chopped
  • 1 red capsicum, deseeded and chopped
  • 2 baby cos lettuce, leaves torn
  • 1/2 cup each chopped mint and parsley
  • 1 small red onion, finely sliced
  • 2 tbsp toasted pine nuts


  1. Heat a large fry pan over medium heat. Add turkey mince and 2 Tbsp lemon juice, cook until brown, stirring to break up mince. Set aside
  2. To make the dressing, combine olive oil, garlic, 2 tsp sumac and remaining lemon juice and zest
  3. Preheat oven to 180°C (160°C fan forced). Cut Lebanese bread in half along the edges to make two rounds. Place onto baking tray and lightly spray with olive oil. Sprinkle 1 tsp sumac evenly over bread pieces. Bake for 3-4 minutes until crisp. Break bread into pieces
  4. In a large bowl, combine remaining ingredients along with the mince and bread. Drizzle with the dressing and toss to coat
