Quinoa and Cranberry Stuffing

Serves: 6

Ingredients

  • 1/3 cup quinoa
  • 1/3 cup barley
  • ¼ cup pistachios
  • ¼ cup cranberries
  • 1 small onion, peeled and chopped
  • 6 sprigs of thyme
  • Zest of 1 lemon

Method

  1. Cook your barley and quinoa separately according to packet instructions.
  2. Place into a cake tin, and mix through your other ingredients. Season well.
  3. Pop in the moderate oven with the turkey for 30 minutes or until slightly browned on top.
