Chicken Sausage Rolls

  • 500g Steggles chicken mince
  • 1 cup fresh breadcrumbs
  • 2 eggs
  • 1 zucchini, finely grated
  • 1 carrot, finely grated
  • ½ onion, grated
  • ¼ cup chopped chives
  • 2 sheets puff pastry, thawed
  • 1 tablespoon sesame seeds
  • Mango chutney, to serve


  1. Process breadcrumbs, chicken, and one egg in a food processor until well combined. Transfer to a bowl, add vegetables and herbs, season with salt and pepper.
  2. Cut pastry sheets in half. Divide chicken mixture into four. Place one portion of filling onto edge of pastry half. Shape into log, roll up, pressing to seal. Place on baking tray lined with baking paper, seam side down. Repeat with remaining pastry and filling. With a knife, score each roll five times. Refrigerate for 30 minutes.
  3. Lightly beat the remaining egg and brush over sausage rolls. Sprinkle with sesame seeds. Bake for 25-30 minutes until the pastry is golden brown and sausage rolls are cooked through.
  4. Serve with mango chutney.
