Chicken Nachos

  • 250g Steggles chicken mince
  • ½ teaspoon chilli powder
  • ½ teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 teaspoons cumin
  • ½ teaspoon cayenne
  • 200g corn chips
  • 1 large avocado, chopped
  • 2 tomatoes, chopped
  • 1 Spanish onion, chopped
  • 400g can kidney beans, rinsed and drained
  • 2 tablespoons sliced jalapenos
  • 80g tasty cheese, grated
  • 1 tablespoon lime juice


  1. In a lightly greased frying pan, add mince and spices. Stir over medium heat until mince is cooked and liquid has evaporated. Use a fork to break up any lumps as mince cooks.
  2. Arrange half the corn chips on a serving plate, top with half the avocado, tomatoes, onion, beans, jalapenos and cheese. Layer remaining corn chips on top and repeat with remaining ingredients.
  3. Place nachos in pre-heated 200C oven for 3 minutes or until cheese has melted. Drizzle with lime juice before serving.
