Asian Salad with Honey and Lime Dressing

  • 2 carrots, shredded
  • 2 cups bean shoots
  • handful green beans, chopped
  • 1 small red capsicum, diced
  • ½ cup coriander sprigs
  • 1/3 cup peanuts, roughly chopped
  • lime wedges to serve


  • 2 Tblsp honey
  • 1 Tblsp peanut oil
  • 2 Tblsp lime juice
  • Salt and pepper to taste


  1. In a large bowl, toss together the carrots, bean shoots, beans, capsicum and coriander.
  2. Prepare the dressing by whisking honey, oil and lime juice. Season with salt and pepper.
  3. Pour dressing over the vegetables and gently toss to coat evenly. Serve topped with peanuts and lime wedges on the side.
