Outdoor BBQ Christmas
The thing about a summer Christmas is the house gets really hot when you crank the oven all day.
Utilising your outdoor areas and cooking on the BBQ is a great solution.
A BBQ with the lid down heats like an oven, you just need to keep an eye on the thermostat as the temperature can go up and down. The biggest problem with cooking a chicken on the BBQ is the skin is often burnt by the time the meat is cooked.
This is why I introduce you to the brick. Cooking on a brick, keeps the skin off the grill but still gives you the BBQ flavor that you love.
Styling your table for a BBQ can be easy done with a little rustic know how. We took an old bamboo screen and cut it into place mats, and kept our colours similar to the desert. It’s festive, it’s earthy, and it’s loads of fun.

Tips For Outdoor BBQ Christmas
To butterfly chicken, place it breast-side down on a chopping board. Taking a sharp pair of scissors, cut from the tail right up on the side of the spine. You will need to cut through the ribs. Keep going all the way up to the neck, before repeating on the other side.
If you prefer your peri peri marinade to be traditional add a few more chilies and omit the capsicum.
If you don’t like marinated red capsicum, you can try these combinations. Use the same dressing
- Celery, capers, and Spanish onion
- Fresh basil, olives, and cherry tomatoes
Suggestion For Leftovers
Leftover chicken and potato would go beautifully in a Spanish tortilla, which is similar to a frittata. Slice and layer your potato and chicken. Crack and whisk some eggs, add some fresh herbs and cheese if you like.
Alternatively, get some Mexican corn tortillas, layer some leftover chicken, cut the corn off the cob, add some capsicum, coriander and cheese and toast it lightly in a fry pan for a delicious take on a Mexican sandwich.
Leftover Pavlova ice cream can be served in a meringue nest and drizzled with raspberry coulis.
